- Tuna au Poivre

- 2 tb Soy sauce
- 3 tb Lime juice
- 1 md Clove garlic; peeled and put
- Through a press
- 3/4 ts Sugar
- 1 lb Fresh tuna
- 2 To 3 teaspoons coarsely
- Ground black pepper

- 1. Combine the soy sauce, lime juice, garlic and sugar. Put the tuna into
- a glass dish and pour the marinade over the fish. Marinate 1-2 hours in
- refrigerator.

- 2. Remove the fish from the marinade, discard marinade and place on a rack
- (or broiling pan) in a foiled lined pan. Sprinkle the pepper on top of
- the fish, patting gently to adhere. Bake in a preheated 450-degree oven
- until cooked through..
